Just throwing a little delish fat bomb into your feed. I’m a big peanut butter fan if you haven’t already sussed that out from many of my posts. It seriously makes me so sad Keller doesn’t like peanut butter. Since his Dad is allergic to peanuts we couldn’t give him peanut butter until after he was 2 at which point my picky little eater already decided he wasn’t a fan. Seven years later I still haven’t been able to convert him. It’s just not right growing up not eating peanut butter and jelly. Anyway, he has no idea what’s he’s missing with these decadent “healthier” buckeyes. They are seriously so good and the perfect little bite-sized treat.Â
INGREDIENTS // 3/4 cup creamy peanut butter *, 1/4 cup maple syrup, 1/2 tsp vanilla, 1/4 cup vanilla plant-based creamer @getplanttheory, 1 tbsp coconut oil, 1 cup chocolate chips 🍫
METHOD // Mix peanut butter, maple syrup, powdered creamer, vanilla. Stir until combined. Roll into balls. Should make 12. Place on a parchment-lined baking sheet and freeze for 20 minutes. Melt chocolate and coconut oil together, stir until completely combined. Stab each peanut butter balls with a toothpick and roll into melted chocolate. Place back on the baking sheet. Once all rolled place back in the freezer for another 10 minutes. When ready, store in the fridge. I promise these won’t last long. Enjoy!
*Use a high quality organic, creamy salted peanut butter. No sugar added and one that does not separate from the oil. You can always substitute for your favorite nut butter as well.
